Brian’s Little Piggy Recipe

Injection mixture for the pig
1 quart apple juice
1 pint cider vinegar
1 jar Paul Prudome’s Meat Magic
1 cup olive oil

The skin is a little tough to pierce with the needle of the injector. I used my Dewalt drill fitted with a 11/64” drill bit rotating at 1257 rpms to pre-drill the hide. I injected the pig. I poured the left over injection liquid over it then let it marinade for 24 hours before starting the roasting process. I roasted it at 225 and the 53 pound pig was done in about 9 hours. Perhaps if I would have started it later and not held it on the smoke setting on my Traeger for so long, it would have been a bit juicier.
