Instructions
  1. Heat the wine, vinegar, and shallots in a saucepan until the liquid comes to a boil, then lower the heat a bit and continue simmering until the liquid has reduced down to about 2 tablespoons. This should take about 10 minutes.
  2. While the liquid reduces you can cut the butter into medium (1/2-inch) cubes, but either leave this until the reduction is nearly finished or return the butter cubes to the refrigerator to keep them cold while the liquid finishes reducing.
  3. Once the wine-vinegar mixture has reduced to 2 tablespoons, reduce the heat to low and start adding the cubes of butter, one or two at a time, and whisk rapidly with a wire whisk.
  4. As the butter melts and incorporates, add more butter and keep whisking. Continue until you only have two to three cubes remaining. Remove from heat while whisking in the last few cubes, and whisk for a few more moments. The finished sauce should be thick and smooth.
  5. Season to taste with kosher salt. Traditionally you would strain out the shallots before serving, but you do not have to do this. Serve it right away.

Instructions
  1. In a bowl, combine the salt, pink salt, sugar, garlic, onion and black pepper.
  2. Rub this curing mix all over the pork butt, ensuring ALL of the cure ends up on the meat.
  3. Place the butt into a large resealable bag, then place it into the fridge to cure for 14 days. Once a day, flip the meat over and massage the contents of the bag to keep the cure distributing.
  4. After 14 days, remove the cured butt from the bag, and rinse under cold water.
  5. Pat the meat dry with a paper towel, then place the butt onto a rack.
  6. Pat the meat dry with a paper towel, then place the butt onto a rack.
  7. Remove from smoker and allow to cool, then store in an airtight container in the fridge. Slice bacon as needed, then cook as usual (oven baked or pan cooked).
